GARNISHES: Lemons

Memorization Tip: The lemon twist is used in Perfect Martinis, and other drinks that require a lemon flavor.

Preparation of Lemons

Lemons are sour and so the normal usage is to use the peel only, which is called a lemon twist. Some drinks may call for a lemon wedge, and wedges are easy to prepare. Refer to the Lime section to see how to make wedges.

Always use a cutting board for cutting fruit. Without the cutting board, the bar may be damaged by knife cuts. First, cut off the ends of the lemon.
Then make vertical cuts all the way around the lemon peel. Do not cut into the actual lemon, just cut through the peel.
The peels may be pulled off as needed. Leave the peels on the lemon until they are used, and they will stay moist and fresh.
These peels are called twists. Twist with the yellow side down. When you practice, notice the juice sprays out of the yellow side when twisted. Next, run the yellow edge around the glass, and drop the twist in the drink.
